MAKE IT THIS WEEKEND: EDITION #2
Another edition of our " Make It This Weekend " series! This one is about some fruity Spritzes, Peach Bellinis and Spicy Gin Margaritas. Because the more gin cocktails in the world, the better, in our humble opinion. No better activity than putting that bottle to use and adding a new easy cocktail recipe to your repertoire. Fun tip? Do it with friends. Because any activity that ends with weekend drinks is always a win.
For our second entry, we wanted to highlight our newest releases: two limited edition Australian gins you can’t get anywhere else. Both are small batch releases distilled right here in Healesville. Perfect for gifting, drinking and made for mixing into easy gin cocktails at home...or anywhere really!
First up is a peach gin…but not any peach gin…Three Peach Gin. It’s fresh and light, with a lower ABV than most gins. This makes it perfect for daytime drinking, weekend brunch cocktails and sunny afternoon spritzes, from an easy Peach Spritz cocktail recipe to a fruity Peach Bellini made with gin (obviously).
Then there's our bold Mexican-inspired gin. El Cuatro Gin. Infused with habanero and citrus, this zesty gin is made for Spicy Margaritas or any kind of Margatini recipe (that’s a margarita with gin). Want something a bit different? Mix up a Cantarito. Surprisingly simple, vibrant, and punchy, it's perfect for when you’re ready to turn things up a notch. Start light with the peach, then move into something with a little more heat.
So, what should you make this weekend? We’ve lined up four easy gin cocktail recipes: a Peach Gin Spritz and Peach Bellini with Three Peach Gin, plus a Spicy Gin Margarita and Cantarito with El Cuatro Gin. Three Peach Gin Bellini

Three Peach Gin brings fresh peach flavour and a little Four Pillars magic to this sparkling cocktail, making it a fruity, easy gin cocktail for anyone who likes their drinks light, bubbly and just a bit fancy.
INGREDIENTS
- 45mLÂ Three Peach Gin
- 30mL peach puree
- 75mL sparkling wine
METHOD
- Combine Three Peach and puree in a flute glass
- Top with sparkling wine and stir to combine
- Enjoy!
Three Peach Gin Spritz
Buy Three Peach GinIf you’re after an easy peach gin cocktail, start here. The Three Peach Gin Spritz is light, bright and made for weekend sipping. With sparkling wine, soda and plenty of fresh peach flavour, it’s the kind of gin spritz recipe that works beautifully for brunch, lunch or a lazy afternoon in the sun.
INGREDIENTS
- 45mLÂ Three Peach Gin
- 30mL soda water
- 60mL sparkling wine
- 10mL sugar syrup ​
- 2 aromatic bitters
- 120mL good tonic
- 12 mint leaves
- Lemon
METHOD
- Combine mint with all ingredients and stir
- Pour into wine glass
- Top with ice
- Garnish with sprig of mint and lemon slice
Spicy Gin Margarita Recipe
Buy El Cuatro GinYes, you can make a Margarita with gin. And yes, it’s excellent. This Spicy Gin Margarita uses El Cuatro Gin for a zesty hit of citrus, habanero and bold Mexican-inspired flavour. Think of it as a Margatini with a little extra attitude.
INGREDIENTS
- 45mL El Cuatro Gin
- 30mL pineapple juice
- 20mL lime juiceÂ
- 10mL agave syrup Â
- 4 dashes green hot sauce
- Pineapple
METHOD
- Combine the gin, pineapple juice, lime juice, agave syrup and hot sauce in a tin and shake with iceÂ
- Strain into a salt rimmed rocks glass
- Garnish with a pineapple wedge
Cantarito
Buy El Cuatro GinFresh, citrusy and seriously fun, this Cantarito recipe is made for El Cuatro Gin. It’s vibrant, punchy and surprisingly simple to make at home, with enough citrus and spice to keep things VERY interesting. One for when the weekend needs a little more energy.
INGREDIENTS
- 45mL El Cuatro Gin
- 15mL grapefruit juice
- 15mL orange juice
- 15mL lime juiceÂ
- 5mL sugar syrup
- 60mL soda water
- Grapefruit
- Tajin
METHOD
- Build in a Highball glass
- Top with ice
- Garnish with a juicy grapefruit wedge
