
How to Drink Wild Isle Gin

Wild Isle Gin is a beautifully savoury gin, packed with salty and briny botanicals that make it perfect for any kind of Martini. But if that's not your jam then don't fret, because this gin makes an incredibly refreshing G&T or Highball style drink with a simple mixer and a juicy wedge of citrus to garnish.
We've tasked our Creative Director of Gin Drinks, Nick Tesar with sharing his top three picks on how he'd mix up Wild Isle Gin, and the results did not disappoint. Start with a simple G&T with grapefruit (and a fresh bay leaf, if you can spare one), then try your hand at a Bitter Rickey, a slightly bitter, yet still fresh drink that's packed with citrus.

WILD ISLE G&T
INGREDIENTS
- 45mL Wild Isle Gin
- 90mL Mediterranean tonic
- Grapefruit
- Bay leaf
METHOD
- Add gin and tonic to a rocks glass with ice
- Garnish with a slice of grapefruit and a fresh bay leaf

COASTAL GIBSON MARTINI
INGREDIENTS
- 45mL Wild Isle Gin
- 30mL dry vermouth
- 2 dashes saline solution (or a very small pinch of salt)
- 1 dash absinthe
- Pickled onion
METHOD
- Combine the gin, vermouth, saline and absinthe in a mixing glass with ice and stir
- Strain into a chilled cocktail glass
- Garnish with a pickled onion

BITTER RICKEY
INGREDIENTS
- 45mL Wild Isle Gin
- 10mL bitter aperitif
- 25mL lime juice
- 10mL sugar syrup
- 60mL soda water
- Lime
- Mint
METHOD
- Combine the gin, bitter aperitif, lime juice and sugar syrup in a tin and shake with ice
- Strain into a tall glass, add soda and top with ice
- Garnish with a lime wedge and mint sprig
What is Wild Isle Gin?
Wild Isle Gin is the sixth release in our Distiller Series of gins, a tradition where every couple of years we get together with one of our distiller mates from across the globe and share botanicals, techniques and experiences to create something exciting and seriously unique.
This gin was made in collaboration with Island Gin, a small craft distillery based on Great Barrier Island, off the coast of Auckland, New Zealand. Inspired by the beautiful nature surrounding the island, our Head Distiller, Sarah Prowse (or Prowsey, as she's better known to the team at Four Pillars) wanted this gin to be super coastal and savoury, a true reflection of the environment it was created in.
She experimented with botanicals like bull kelp (foraged off the Great Ocean Road), Old Man saltbush and kunzea, two kinds of Aussie coastal bushes. She threw those all in the pot of a still, along with rosemary, Tasmanian pepperberry, bay leaves, and some quandongs for sweetness along with some Manuka honey, brought home from Great Barrier Island. The resulting gin is layered and textured, with a brininess that makes it perfect for a Martini. The subtle line of Manuka honey gives the gin a nice floral characteristic to finish.
