FRESH QUINCE OF BEL-AIR GIN COCKTAIL RECIPE
'Cos who said quince paste only belongs on a cheeseboard?
INGREDIENTS
- 45mL Chardonnay Barrel Gin
- 30mL fresh lemon juice
- 10mL apricot brandy (or simple syrup)
- 1 Bar Spoon quince paste
- Egg whites (or aquafaba)
- Sage leaf
METHOD
- Add all ingredients to a shaker with ice, shake and fine strain into a Coupette
- Garnish with a a sage leaf
