
Coastal Gibson Martini
A curious Martini, with a hint of anise. This brings forward a grapefruit warmth, then finishes dry and savoury.

INGREDIENTS
- 45mL Wild Isle Gin
- 30mL dry vermouth
- 2 dashes saline solution (or a very small pinch of salt)
- 1 dash absinthe
- Pickled onion

METHOD
- Combine the gin, vermouth, saline and absinthe in a mixing glass with ice and stir
- Strain into a chilled cocktail glass
- Garnish with a pickled onion
