Introducing the second release in our Whisk(e)y Barrel series. High-proof Rare Dry Gin aged in Chardonnay barrels for nine (and in some cases, more) years, then transferred into ex-bourbon barrels, sourced from our friends at Four Roses Distillery in Kentucky for another two years of maturation. The final gin shows classic juniper and citrus with lashings of caramel and sweet spices along with hints of dried fruit, vanilla and toasted notes.

Our Whisk(e)y Barrel Series is all about taking our love for ageing gin to another level, sourcing and using some of the finest whisk(e)y barrels from all over the world.
We’ve been ageing gin in barrel since the early days of Four Pillars in late 2013 when our co-founder Cameron Mackenzie found a small number of exceptional barrels to experiment with. Barrel-ageing gives a complexity to the gin, adding incredibly rich flavours and colour. So when the chance to take stock of some bourbon barrels from Four Roses Distillery in Kentucky came up, we jumped.
Founded in 1888, Four Roses is one of the founding members of the Kentucky Bourbon trial, a bartender favourite and true icon of the bourbon and spirits world.
By the time the ex-bourbon barrels arrived at our Healesville Distillery, we had been ageing high-proof Rare Dry Gin in our solera system of Chardonnay barrels for around nine years (and for some batches, even longer).
We got to work transferring the gin into the Four Roses barrels and left them to mature for a further two years, extracting caramel and vanilla notes, and Four Roses’ signature mellow spice, while imparting a bright honey colour.
The final liquid shows classic juniper and citrus with lashings of caramel, brown sugar and brown spices. It has a rounded mouthfeel and a creamy texture with hints of dried fruit, vanilla and toasted notes. There is a lovely lingering sweetness and spice to the finish.
We chose to bottle it at cask strength, giving discerning drinkers the option to taste this exactly how it came from the barrel. Drink it neat or on ice, on your favourite chair next to an open fire.

Bourbon barrels sourced from one of the world’s most iconic bourbon producers, Four Roses Distillery.
Without juniper, there is no gin. When distilled, it adds a medicinal flavour with notes of pine needles. Juniper is grown wild, and the berries are harvested by hand on mountain slopes.
We source coriander seeds locally for their intense aromatics. We use the dry seeds (not fresh leaves) and they produce amazing lemony citrus notes when crushed and distilled.
We use green cardamom, one of the most expensive spices in the world. The flavour is intense, giving sweet perfumed notes and ginger characteristics when distilled.
This spice is made from the bark of East Asian trees related to the ‘true cinnamon’ of Sri Lanka. Cassia adds a distinct richness to our gin, bringing all the other spices together.
We source ours from Vietnam and the aromatics are insane. When we open a small package of star anise the entire distillery fills with aromas of fresh liquorice, sarsaparilla and pastis.
Lavender is used sparingly to lift the other aromatics, so it isn’t an obvious character in the final gin. Grown locally, though occasionally we have to source from France.
We use the root of the plant, which has a very earthy, mushroom or woody smell. Angelica adds to the soft texture of the final gin, along with a very, very subtle bitterness.
We use the leaf of the Tasmanian pepperberry. This local botanical works so well with our Asian spices, adding warmth and length to the palate without adding heat.
Lemon myrtle is a beautiful alternative to lemon peel when distilling. Its floral character mingles with the other spices without dominating any flavours, textures or aromas.
In Australia we’re lucky to have oranges all year round, from different growers depending on the season. Fresh biodynamic oranges give warm Mediterranean citrus notes that lift all the spices.
