Bitter Rickey

Slightly bitter but still fresh, full of citrus zest and seriously refreshing.

INGREDIENTS
- 45mL Wild Isle Gin
- 10mL bitter aperitif
- 25mL lime juice
- 10mL sugar syrup
- 60mL soda water
- Lime
- Mint
METHOD
- Combine the gin, bitter aperitif, lime juice and sugar syrup in a tin and shake with ice
- Strain into a tall glass, add soda and top with ice
- Garnish with a lime wedge and mint sprig
