Melbourne Laneway Gin Tiramisu


A Melbourne take on the classic Italian tiramisu. Made with our Melbourne Laneway Gin, which pairs beautifully with fluffy mascarpone and smooth espresso. Serve with Coffee Negronis, Espresso martinis and a bowl of cherries to cut through the richness.

  • Ingredients

    • 45ml Melbourne Laneway Gin
    • 250g quality mascarpone
    • 300 ml thickened cream
    • 75g caster sugar
    • 43 egg yolks
    • 1 tsp vanilla extract
    • 200 ml strong espresso, cooled
    • 200g Savoiardi sponge biscuits
    • Dutch cocoa

    Tips

    • Buy good quality mascarpone; it will help the tiramisu set better.
    • A good Dutch cocoa will provide a smoother, richer taste.

    For the best depth of flavour, use Melbourne Laneway Gin and allow the tiramisu to set overnight before serving.

  • Method

    • Whisk the egg yolks and sugar in a bowl over a pot of simmering water until thick and pale.
    • Remove from heat and allow to cool.
    • Whip the cream to soft peaks.
    • Fold the mascarpone and vanilla into the egg mixture, then gently fold in the whipped cream until smooth.
    • Stir the Melbourne Laneway Gin into the cooled espresso.
    • Dip each biscuit quickly in the coffee mixture and arrange in layer over base of dish
    • Spread half the mascarpone mixture over the layer and repeat, finishing with a layer of mascarpone
    • Let chill for at least six hours (preferably overnight)
    • Finish with dusting of cocoa
