Rare Old Tom Collins

A nod to the original prankster and the perfect classic Old Tom Gin cocktail.

INGREDIENTS
- 50mL Rare Old Tom Gin
- 30mL fresh lemon juice
- 20mL sugar syrup [1:1]
- Soda water
- Lemon
- Cherry (optional)
METHOD
- Shake the first three ingredients and fine strain into a soda-primed glass
- Add ice and top with another hit of soda water
- Garnish with a lemon wheel and cherry (if you’re up forit!)
