WHAT IS BARREL AGEING?

In today’s craft distilling industry, more and more gin distilleries are experimenting with barrel ageing and returning to a sweetened or softened Old Tom style of gin. Here’s where these concepts came from, in the history of gin distilling, a solera system explainer and the inspiration behind our barrel-aged gin series.

A brief history of barrel-aged spirits

In the eighteenth and nineteenth centuries, all spirits were stored in barrels.

But gin, Britain’s most popular spirit, was never stored for long. Gin was barrelled, but not aged. Gin was sweetened, but only to make this badly distilled “bootleg” gin palatable. It was served like this to rabble-rousers of the 1800s as 'Old Tom,' the forbidden nectar of prohibition times.

This very particular spirit got its name from the practice of dispensing the gin through a pipe disguised in the mouth of an Old Tom cat wooden plaque on the wall. Clear gin (masquerading as water in these times of gin prohibition) came pouring from the cat’s mouth. So this might have been the world’s first drink dispensing machine, which is awesome.

And as primitive as it sounds today, this not-very-barrel-aged, slightly soft, slightly sweet style of gin rode a wave of popularity until the start of the 1900s, when London Dry styles really took off. Poor Old Tom was no longer the cat’s pyjamas in the gin game – London Dry then took and held that honour for more than a century.

More recently, craft gin distilleries have been experimenting with ageing gin in barrels, to make a softer, sweeter gin. In fact, we started ageing one of our first batches of Rare Dry Gin in old Chardonnay Barrels at the end of 2013, and now we have a whole collection of gins in our Barrel Aged series (just keep reading).

THE ORIGIN OF FOUR PILLARS BARREL AGED SERIES

Our Co-founder, Cam Mackenzie first filled French oak barrels (on Christmas Eve!) in 2013 with Rare Dry Gin after he and our other Co-founder Stu Gregor returned from a US trip and saw several gins aged in American oak. Some of these gins were a little hit and miss. American oak can be very dominant with huge vanilla/coconut characters. Some of the gins looked like Bourbon. However, one gin stood out – Ransom Old Tom. Made in Oregon by a winemaker using seasoned French Oak Barrels. This was a cracking gin and the original inspiration for our first barrel-aged gin, Chardonnay Barrel Gin. And so, we set about creating a solera of ex-Chardonnay barrels in early 2014.

STARTING OUR OWN SOLERA SYSTEM

The older and bigger the system, the more profoundly aged the resultant fortified wine. And we decided that we wanted to create a similarly complex, barrel-aged product with our original Barrel Aged Gin series. But we wanted this to be a modified solera system at Four Pillars, because (as with fortified wines) it is not always the case that older is better and it would be easy to over-age the gin. The art comes from blending the right combinations of the new with the old.

The difference between using old and new became obvious in February 2014 when we purchased a brand new barrique from Mercurey, one of the great coopers of France. Within a mere two weeks the gin in the new barrel had gained a golden colour and taken on some sweet vanillin oak characters. A terrific blending option, but we wanted our barrel-aged product to taste of gin, not wood.

In March 2014 we purchased three five-year-old former Chardonnay barriques from Dargue & Jaegle. D&J barrels are famous in the world of wine as the staves are steamed rather than toasted. Thus they lend very subtle, fine oak characters without overt toastiness. 

  • SOLERA SYSTEMS, EXPLAINED

    A fraction of each barrel on the bottom level is removed for bottling, thus creating the Solera, with the empty space filled with gin from the barrels on the level above, and that empty space is filled from the barrels on the level above. Empty space in the top level is filled with new or young gin from the still. No barrel is ever completely emptied.

  • CHARDONNAY BARREL SOLERA

    Our Chardonay solera is made up of nine French oak barrels, each with a subtly different character. Our barrels come from the finest French coopers and have previously been used to mature Yarra Valley chardonnay. They range in age from two to eight years, and the eldest lend an extraordinary golden colour to the spirit. Each solera release is a step up in character and intensity.

  • Sherry Cask Solera

    Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, the artist formerly known as ‘Sherry’ and now known as Apera. They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old. These casks were first filled in 2016, and our first solera release in 2018 was taken only from the bottom row of casks. 

THE BARREL AGED COLLECTION

The range of gins we’ve produced, between our Chardonnay Barrel Gin, Sherry Cask Gin and Australian Christmas Gin, is astounding, and a testament to our place in one of the greatest wine producing regions in the world.

  • Chardonnay Barrel Gin

    Our first-ever barrel-aged gin and now we're onto our twelfth release. As soon as you open the bottle, you’ll get great aromas of preserved lemon, ginger, light vanilla and cinnamon. The palate is delicious with a line of spice developing every year alongside a light, creamy texture. The finish is dry with lingering spice and fresh citrus peel and it’s sensational in a classic Old Fashioned.

  • SHERRY CASK GIN

    Our current release is Solera No_6. Pour some into a glass and you’re hit with aromas of pine needles, nuts and dried fruits. The palate is huge. Big sweetness and chewy oak twisted with cocoa, cinnamon, and very light star anise. It’s perfect for sipping on a big cube of ice, or try mixing it up in our barrel-aged take on a Dark n’ Stormy.

    DOUBLE BARRELLED NEGRONI

    This ready-to-drink Negroni blends Chardonnay Barrel Gin and Sherry Cask Gin with our punchy Spiced Negroni Gin, giving it great smoothness and balance. We add native wattle seed, white chocolate and a hint of rhubarb to make it a truly decadent and robust twist on the classic Italian Negroni.

  • SINGLE BARREL GINS

    Within our Sherry cask programme, there were a few barrels that really stood out to us. For some reason they just developed differently, with more complexity and depth. And so, rather than blending them with gin aged in other barrels in our solera, we released them as is – one (S31) after three-a-half years in barrel, one (S30) after four-and-a-half years in barrel and one (S36) after five-and-a-half years in barrel.

  • AUSTRALIAN CHRISTMAS GIN

    To make this special annual release, we distill all the ingredients needed to make a perfect Christmas pudding, then age the liquid for a year in 100-year-old Muscat barrels. The resulting gin has aromatics of classic juniper and a hint of cinnamon, backed up with a rich palate and a hint of sweetness from the Muscat.

    SINGLE VINEYARD SERIES

    A special collaboration with one of the Yarra's finest Shiraz vineyards, Yarra Yering. We steeped whole bunches of Underhill Shiraz in Rare Dry Gin, aged in old Yarra Yering barrels, then pressed them off and added a touch of gentian for gentle bitterness. In 2022, we repeated the process, this time with gin that spent two years in barrel. For the third and final release, we went even further, maturing the Bloody Shiraz Gin in barrel for an additional nine months to soften the gin and draw out vanilla notes from the oak.

  • WHISK(E)Y BARREL SERIES

    This series takes our love for barrel ageing gin and elevates it, using barrels from some of the world’s best whisk(ey) distilleries to impart rich flavour and colour to the gin. Our first release used old LARK barrels and for the second, we headed overseas to the heartland of bourbon, Kentucky, and took stock of barrels from the renowned Four Roses Distillery.
