Four Pillars Rare Dry Gin is our baby, Wilma’s first born. It is the concept that started us out on this journey… a truly modern Australian gin.

We wanted to create a gin to represent our idea of contemporary Australia: classic, approachable, spiced to perfection and lifted with great citrus. Above all, dangerously delicious, and made to enjoy in the world’s best gin drinks, always kicking off with a perfect G&T.

Our starting point was the Yarra Valley’s clean, bright water, among the very best in the world. Then we selected our nine signature botanicals plus whole oranges to add a highly aromatic character, a Mediterranean warmth to support the spicier botanicals like cardamom.

Each of these elements (and a whole lot of love) were distilled together in our magnificent German-made copper pot still, Wilma, until we were left with a beautifully clean spirit packed full of flavour.

Tonka Beans
location: South America

Tonka beans are seeds native to South America and bring a rich, complex mix of vanilla, almond, and hazelnut, with warm notes of spice like cinnamon and clove.

St. David's clarified butter
location: Fitzroy, Melbourne

Clarified in the Distillery, this butter adds caramel, butter biscuit notes. It's warm and rich giving an incredibly silky textural element to the palate.

Proud Mary green coffee beans
location: Fitzroy, Melbourne

These beans come from Proud Mary Coffee Roasters in Fitzroy. Part of the same Humbler blend as the roasted beans, they act as a fixative, helping trap the essential oils in the alcohol. Traditionally, Angelica or Orris Root is used.

From our mates in Proud Mary, these coffee beans come from the Humbler Blend and are roasted in Fitzroy. Made for smooth, complex milk-based coffees (and now, gin!), they bring in deep chocolate and coffee aromas.

This famous cocktail is very simply stirred over ice. We make ours wet, with a little more vermouth for the aromatics.

INGREDIENT
  • 45mL Rare Dry Gin
  • 90mL good tonic
  • Orange
METHOD
  • Add gin and mixer to a rocks glass over ice
  • Garnish with wedge of orange

This classic cocktail dates back to the nineteenth century, using a sweeter Old Tom style of gin.

INGREDIENTS
  • 50mL Rare Dry Gin 
  • 25mL fresh lemon juice 
  • 15mL sugar syrup  
  • Soda water 
  • Lemon
METHOD
  • Shake the gin, lemon and sugar syrup over ice
  • Strain into a highball with ice
  • Top with soda water 
  • Garnish with a wheel of lemon

INGREDIENTS
  • 45mL Rare Dry Gin 
  • 100mL fresh tomato juice 
  • 20mL fresh lemon juice 
  • 15mL Worcestershire sauce 
  • Tabasco sauce 
  • Lemon
  • Celery
METHOD
  • Build in a highball over ice
  • Stir well to combine
  • Garnish with a celery stick and lemon wedge

  • 60mL Rare Dry Gin 
  • 15mL dry vermouth
  • 2 dashes orange bitters
  • Orange
METHOD
  • Stir and strain into a chilled cocktail glass 
  • Garnish with an orange twist
