Olive Leaf Gin is our savoury gin, five delicious years in the making. It’s textural, bright and perfect for a Martini or Gintonic. We’ve used three types of cold-pressed extra virgin olive oil and olive leaf tea from the world-class groves of Victoria's Cobram Estate. Botanicals like rosemary and bay leaf transport you to the Mediterranean (even though they're from Cam’s garden), while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.

Our textural and savoury Olive Leaf Gin has officially earned its status as a master of its category, and we couldn't be prouder.
Our first foray into savoury, Mediterranean-inspired gin flavours was our 2015 limited-edition Cousin Vera Gin made with our friends at Santamanía Destileria Urbana in Madrid. It was from the making of this gin, that we knew gin and olives combined beautifully. And that there was a real love for savoury gin.
A few years later we paid a visit to our great mates at Cobram Estate in Victoria’s Boundary Bend during olive harvest, and it was there that we realised olive oil could actually be a brilliant botanical alongside dried olive leaves.
Then came the countless trials to perfect the gin. The aroma, flavour and texture of fresh olive is stunning, and so we did an entire year of trials before finalising the recipe.
Along with the cold-pressed olive oils and olive leaf, we landed on botanicals like rosemary and bay leaf that transport you to the Mediterranean (even though they’re from Cam’s garden), while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.
The result is a completely delicious, savoury and bright gin that we released in August 2020.
Savoury, textural, bright and perfect for any Martini. Or a Spanish-inspired Gintonic.
Harvested with the olives at Cobram Estate, the dried leaves retain their oils and flavour. Herbaceous with green tea notes and light tannins.
Fresh local lemons lift the savoury botanicals, adding fruit and brightness.
Bay leaves are from the laurel tree, native to the Mediterranean. Ours are fresh from local backyards including Cameron's. Bright green, herbaceous and slightly sweet.
Extra virgin olive oil from the Picual, Hojiblanca and Coratina varieties, all harvested at Cobram Estate in Boundary Bend. Fresh cut grass characters and textural notes.
The Australian macadamia may be the most expensive nut in the world, and the hardest to crack. But it’s worth it for the sweet, buttery flavour and texture these native nuts provide.
This woody herb is native to the Mediterranean region, but sourced locally from Cameron's backyard. Savoury pine characters from incredibly aromatic fresh leaves.
Grown in Cam's own backyard, this ruby grapefruit doesn't get any more fresh and local. Distilled whole, the citrus adds a crisp freshness to the gin.
Without juniper, there is no gin. When distilled, it adds a medicinal flavour with notes of pine needles. Juniper is grown wild, and the berries are harvested by hand on mountain slopes.
Lemon myrtle is a beautiful alternative to lemon peel when distilling. Its floral character mingles with the other spices without dominating any flavours, textures or aromas.
We source coriander seeds locally for their intense aromatics. We use the dry seeds (not fresh leaves) and they produce amazing lemony citrus notes when crushed and distilled.
Lavender is used sparingly to lift the other aromatics, so it isn’t an obvious character in the final gin. Grown locally, though occasionally we have to source from France.
The root of the iris plant, orris has a distinctive floral quality. Used sparingly as a base in gin and perfume.
Savoury, textural, bright and perfect for any Martini. Or a Spanish-inspired Gintonic.
Sipping on a gin balloon full of ice and deliciously garnished Gintonic, it's easy to imagine you're in Spain.
Add some dirty tonic and an olive to this G&T to get into the savoury spirit of our Olive Leaf Gin.
This classic wet Martini doubles down on the olives to give you the perfect apéro hour drink, with nibbles included.
Olive Leaf Gin is made for this style of Martini. Cameron's favourite, with the addition of cocktail onions and a little dry sherry.
