DRINKING YOUR AUSTRALIAN CHRISTMAS GIN
Out of one of Cam’s favourite family traditions came this fun, festive, complex gin that sings of hot Australian Christmas days spent feasting, drinking and playing cricket.
So, how should you drink your Australian Christmas Gin?
Firstly, we love a nip of it on the rocks with a twist of orange so you can taste all those Christmas flavours to their fullest. Or if you want to go to a richer level, take a note out of Cam’s book and add a teaspoon of cream.
But Christmas time in Australia means summer days, so we know you’ll be hankering for something fresh and cool. For a super simple thirst quencher try a Christmas Gin & Ginger with ginger ale or beer and fresh lime (reminiscent of a Dark & Stormy).
Whether you’re celebrating with friends and family or simply enjoying a quiet night at home, our Christmas cocktails are the perfect way to add some gin-fuelled festive fun to the holiday season.

GIN & GINGER
INGREDIENTS
- 45mL Australian Christmas Gin
- 2 dashes Angostura aromatic bitters
- Ginger beer or ale
- Lime
METHOD
- Add gin and bitters to a tall glass
- Squeeze in a wedge of lime and add ice
- Top with ginger beer or ale and garnish with another lime wedge

Christmas Coffee Colada
INGREDIENTS
- 40mL Australian Christmas Gin
- 30mL coconut water
- 15mL sugar syrup
- 30mL cold brew coffee
- Soda
- Lemon
METHOD
- Combine the gin, coconut water, sugar syrup and cold brew coffee in a Highball glass and add ice
- Top with soda and garnish with a wedge of lemon

Pavlova Sour
INGREDIENTS
- 45mL Australian Christmas Gin
- 15mL passionfruit syrup*
- 20mL lemon juice
- 20mL egg white (or Wonderfoam)
- Mint
METHOD
- Combine all ingredients in a tin with ice and shake
- Strain into a Rocks glass and top with ice
- Garnish with a mint sprig
*To make passionfruit syrup:
- Combine 250g caster sugar with 250mL water in a saucepan and bring to the boil
- Stir to dissolve sugar and remove from heat
- Add 250g fresh (approx. 5 passionfruit) or frozen passionfruit pulp and soak for two hours before straining and bottling
- Keep refrigerated (will keep for two weeks)

Christmas Strawberry Cup
INGREDIENTS
- 500mL Australian Christmas Gin
- 100mL orange liqueur
- 200mL strawberry syrup*
- 200mL orange juice
- 200mL lemon juice
- 700mL soda water
- Lemon
- Mint
- Strawberries
- Icing sugar
METHOD
- Combine all ingredients in a punchbowl and top with ice
- Garnish with wedges of lemon, sprigs of mint and half strawberries
- Lightly dust with icing sugar
*To make strawberry syrup:
- Combine 500g caster sugar, 500g frozen strawberries and 1000mL water in a container, allowing strawberries 24 hours to defrost and bleed.
- Stir and strain into a bottle and refrigerate to chill (will keep for two weeks)
