Merivale Midday and Midnight Gin

A pair of two gins created with and inspired by the bartenders of Merivale. At Four Pillars, we've watched with awe as Merivale has helped change the way Australia drinks, both in the sunshine by the beach and late at night in the city. So we thought it would be great fun to create a pair of gins to embody these two sides of Merivale.

Merivale Midday Gin is inspired by Merivale’s love of a beachside coastal venue. The gin itself is quite savoury and herbaceous, combining some salty and floral notes that show up beautifully in long daytime drinks like a G&T or a Gin Spritz.

The Midday Gin is bright, fresh and citrusy on the nose, with great weight, balanced freshness, and contrasting savouriness shining through. It’s a perfect mix of savoury, citrus, and spice.

Merivale Midnight Gin is inspired by Merivale's love of a late night inner city venue. The gin itself has some pronounced spice, balanced with bright fresh citrus notes, making it perfect in a Negroni or freezer-door Martini.

The Midnight Gin has bold spice and warmth on the nose, with great weight and integration of juniper through the body. The taste delivers on the aroma, spice-forward, robust and delicious.

Half soda and half tonic - light, refreshing and a big favourite of ours.

INGREDIENT
  • 45mL Merivale Midday Gin
  • 50mL tonic water
  • 50mL soda water
  • Sea salt
  • Lemon
METHOD
  • Dissolve a pinch of sea salt into gin in a rocks glass.
  • Add tonic water, soda water and ice.
  • Garnish with a lemon wheel.

INGREDIENT
  • 45mL Merivale Midnight Gin
  • 100mL tonic water
  • Ruby grapefruit
  • Bay leaf
METHOD
  • Build in a rocks glass over ice.
  • Garnish with a crescent of ruby grapefruit and a bay leaf.

INGREDIENTS
  • 30mL Merivale Midday Gin
  • 30mL bitter aperitif
  • 20mL soda water
  • 60mL champagne, preferably Brut in style
  • Fresh orange
METHOD
  • Build in a wine glass over ice, stir to mix.
  • Garnish with an orange wheel.

  • 20mL Campari
  • 20mL Amaro Montengro
  • 20mL sweet vermouth
  • Fresh orange
